When I saw that wings were $3.99/lb while organic chicken legs were $2.39/lb, the decision was clear.
Adding a drizzle of olive oil, I cooked each side for 10 minutes, then followed the rest of the recipe of cooking the sauce until sticky and mostly evaporated. NOTE: This is TOO LONG. While the chicken was still moist, the meat was completely pulled away from the bone and temperature was going over 175 when I pulled it out--before it had reached sticky stage. I think you can get away with 6 minutes on each side and leave more time for the sticky step.
I ended up pulling out the legs and reducing the sauce separately to avoid totally overcooking the chicken.
Be sure to add the lime (or lemon) juice squeeze when serving. I initially forgot about that--and it helps give a burst of happiness with all that stickiness.
We were two little gluttons and polished off 11 legs between our lunch and dinner meals.
