Healthy-ish berry pie

I want to try to make this pie. I love berries and chocolate, and it sounds healthy too so I hope it will taste as good as it sounds.

Chocolate Crust

½ cup non-dairy milk

½ cup distilled water

14 soft medjool dates, pitted

1 ½ cup oat flour

1 cup unsweetened cocoa powder

½ cup ground flaxseeds

1 tablespoon coffee extract

1 tablespoon chocolate extract

Filling

1 ½ cups organic frozen strawberries

1 ripe medium sized banana

3 medjool dates, pitted

2 tablespoons ground flaxseeds

Toppings

One medium sized banana, sliced

Fresh berries of your choice

To create the crust, in a large bowl combine the dry ingredients: oat flour, ground flaxseeds, and cocoa powder. Put the bowl aside.

Place pitted dates in a small bowl with the water and non-dairy milk. Heat for 30 seconds in the microwave (this makes them soft and gets them ready for easy blending). After heating in the microwave, place these ingredients in a blender or vita-mix along with the chocolate extract and coffee extract (if using). Blend until smooth. Pour this blended mixture into the bowl with the dry ingredients.

Mix the wet and dry ingredients together until a nice doughy ball forms. Place this dough in a pie pan and mold it into a crust.

To prepare the filling, simply blend the defrosted strawberries, banana, pitted dates and flaxseeds in the blender and pour over the pie, leaving extra room around the rim of the crust uncovered with the filling. You’ll want to leave the rim of the pie uncovered with filling so you have room to place banana slices around the edge of the pie crust for garnish.

After the filling is poured over the pie crust, place banana slices around the rim of the pie and add assorted fresh berries on top of the pie filling (as pictured).

Bake for 35-40 minutes at 350 degrees F and voila, your pie is finished and ready for eating!
