Heart of Palm Salad with Sherbert Dressing

This is an awesome salad. I've had this a couple times when visiting Cedar Key, here in Florida. The restuarant, Captain's Table, that created and served this is no longer in business, sadly. It's a salad that should be shared and not lost. Thus, I'm sharing!

It goes great with seafood and, of course, tropical parties.

Heart of Palm Salad with Sherbert Dressing

1 14oz can hearts of palm, sliced

2 papayas, peeled and cubed

2 bananas, sliced

1 fresh pineapple or 1 20oz can of chunk pineapple

6 oz dates, chopped

1 pint frozen sherbert dressing

Lettuce for garnish (holding the salad)

FROZEN SHERBERT DRESSING

1 PINT LIME SHERBERT

1 PINT PINEAPPLE SHERBERT

1/4 C MAYO

7 OZ EXTRA CRUNCHY PEANUT BUTTER

3 OZ LEMON JUICE

1-2 DROPS GREEN FOOD COLOR

 
Wow! Does this ever sound good!!! I've never seen a dressing made with sherbert, and PB no less!
