Heather, I used your bell pepper roasting method and it worked great.

Not the blow torch one, but the one where you roast in the oven at 500 degrees. The peppers I had were huge and very thick-walled so they took longer, and I stuck them under the broiler for a bit to blacken them up a bit, but it was so much easier than doing them on the grill. Now I am flash freezing them to store in a zip loc bag. Thanks for a great tip!

I don't have the original post, but here is the method from Heather/SF:

"I think I posted this earlier, I was watching Ina Garten and she preheated an oven to 500, then put the whole washed peppers on a baking tray and baked for 30 minutes. then you cover the tray with foil for 20 minutes, they peel like a dream *all over*. This has to be the easiest way, outside of playing with my blow torch. Now I but the bags of peppers from Costco all of the time."

 
So glad you tried it! It's pepper season and I've been buying loads myself.

I do love Ina's recipes, they work and aren't fussy..

What are you going to make with your peppers?

 
Just plain, and in zip loc bags.

I plan on using them in salads and enchiladas. I love their flavor. Now I can just take a piece out and chop it up and put it in anything I want. Great technique and the freezing went well too. No oil whatsoever. I used parchment paper.
