RECIPE: Helen Fletcher Recipe: Mexican Street Corn off the Cob

It is a really neat flavor combo.

Hacks: I use frozen Fire Roasted Corn from Trader Joes. Works great! Just pour the frozen corn (one bag conveniently makes one batch) into a non-stick skillet and heat with a couple of pats of butter until just hot. Allow to cool a bit and mix with the rest of the ingredients.

Also, I've made it with cotija cheese, feta and parmesan. Cotija is our favorite, but parmesan is acceptable, freshly grated. Feta? Meh... okay, but not as good, IMHO.

To the Fletcher recipe I would add a clove of pressed garlic and 1/2 cup of thinly sliced green onion tops.

Nice to see some savory recipes from Helen Fletcher. Clicked on her

name in the article and saw a whole slew of savories that sound good. We don't tend to eat alot of sweets at our house so the savory recipes are what appeal most to me these days.
