Hello, my name is pinkysautes and I am new and I have a ?

I just bought a new sauteuse 7qt pan stainless steele (Phillipe Richards)

I want to know if anyone has specific uses besides browning, sauteing,or frying?

I hope to hear of some new ways to use it and maybe some recipes too.

 
Welcome! The advantage of a sauteuse pan is for making sauces...

because of the design of it, there are no corners or angles that you can't easily get to with a whisk, spoon or spatula making it ultra easy to get all the bits of fond and avoid any darkened spots or clumps of flour.

So have fun making any dish with sauces!

 
I use mine for sauces and so much more- I too have a 7 qt sauteuse pan

Missy is right- It is wonderful for reducing sauces or for other reductions because there is so much flat area of the pan. I use mine for sauteeing anything and everything, for braising, even for making soups and stews. It is an extremely useful pan.

5 qt one I love them Now I have 2. I use them for everything too (just about any way my favorite pan to reach for)

I have a domed one too why I bought the new one.

Here is a vegetable briami recipe I obtained here awhile ago on FK (Sorry I forget who's recipe this is it's the best though that's for sure)~ this recipe is fantastic and I've made it at least 6 times ~ I now make it in my sauteuse pan and I also use mine to boil lasagna noodles too the best for the the lasagna to cook in

BRIAMI a Vegetable Entree

Preheat oven 420°

Ingredients


10 good-sized zucchini, washed and scrubbed and cut crosswise into 1/4 inch slices
7 large-sized potatoes, peeled and cut crosswise into 1/4 inch slices
5 garlic cloves, sliced thin
2 very large onions (Spanish or Bermuda), peeled, cut in half, each half cut into thirds (large wedges)
3 large tomatoes, peeled and cut into quarters
1/3 lb hard cheese (I use 'kefalograviera or 'myzithra' which you may not have - something like Parmesan would be excellent - use a cheese you like)
¾ cup olive oil
1/2 cup water
2 tablespoons oregano
3 tablespoons cut mint
3 tablespoons cut cilantro (optional)
salt and pepper

Step 1

Put everything in a very large baking pan.

Step 2

Pour water, olive oil on top and add herbs. Season generously.

Step 3

Put your clean hands in the pan and give all the veggies a toss so herbs, and oil and salt and pepper go on everything.

Step 4


Roast in 420° oven for a couple of hours, stirring everything up a couple of times to allow veggies on bottom to come up and brown nicely too.

Step 5

This is delicious with good crusty bread (lovely juices) and feta cheese on the side

Lol, I would have answered sooner, but didn't know my favorite pan was a sauteuse until I

googled. I use a 4 qt. to make most of my pasta sauces. Then I just dump the pasta in and mix it in the pan. Works great. I also use it to make arroz con pollo, some stews and also some stir-fries. In fact, it's probably the pan I reach for most. I had a Scan Pan version that I had to toss, started looking rusted or something. Now I use a stainless steel calphalon model.

 
That's so funny, my friend that was looking for a Dutch oven, sent me this link

and I had never heard of this line of cookware before. I am trying to resist ordering one but for $16, I think I have to get one. It looks great and I love stainless steel.
I know it isn't a true Dutch oven, but it looks like a very useful pot. Has anyone else had any experience with this line of cookware?

My sauteuses are the most used cookware in my kitchen. BUt would you mind just giving me the

dimensions so I can tell what size it is?

I have heard hosts of cooking shows lately, saying that it's their favourite and indispensible pot. In fact, I was going to suggest it to Dawn over the Dutch oven.

 
I thought it looked pretty good too, Dawn so I googled reviews of the product.

Don't buy it. Poor quality. Someone said the lid cracked while cooking with it. Some sort of cheap finish coming off in the food. It's supposed to be 18/10 but evidently it's not.

 
I think the gumbo recipes at post 9861 would work well in your pan...

I used a 6 3/4 qt Le Creuset oven, so your 7 qt should work.

However, if the pan is thin on the bottom, I'd use Marianne's microwave method for the roux.
