HELP, Any of you food professionals. Food writing job open, I'm published, but not as a food writer

Here's the ad:

Unleash your inner Rachel Ray. Monthly magazine with statewide circulation seeks an experienced, locally based food writer to write monthly content on a freelance basis. Opportunities include a cooking column, restaurant reviews and various food briefs. For consideration, please send a resume and three samples.

Here's my freak out:

There is a oppoortunity for me to apply for a food writer position, they want a resume and 3 writing samples. I can tailor a resume, but I've never had to make one for a writer. Also,I am going to begin a business in OK as a personal chef in January. So that would definately go in a cover letter. I have never done any food writing, but I am qualified, as I am a gourmet. HELP! Resume, what kind, writing smaples, what do I use, and do I write a sample article on a food subject? I think I'm OK to have it in by Tuesday, as the job post just came up today.
