Help. Does anyone know how much a tomato reduces once roasted? I'm making

a favorite tomato/fennel soup and it calls for 2 lbs of fresh tomatoes that get roasted. But I've got 2 cups of already roasted tomatoes in the refrigerator and don't want to buy more. I can scale down the fennel, but have absolutely no clue what these weighed fresh because they were five different types and sizes and degrees of ripeness.

 
My guess is that you have enough already, Marilyn

I don't know the exact answer to your question but I do know around 4 large Romas = lb fresh and a large other type of tomato would be around a lb. So if you have two cups of roasted you most likely have enough. Besides, tomato soup is "forgiving" of perfection of amounts
