HELP!! Emergency cooking question about flour usage in cheesecake!

Be at rest. You don't have to use flour...I never did. The eggs hold it together. Don't overbeat

them. You can beat the creamcheese and sugar until the cows come home, but minimize the beating once you add the eggs or you'll get a souffle effect (puff, crash, & crack---hey, that sounds like a breakfast cereal for crack addicts.)

I like to add a few tablespoons of a complimentary liquor. Seems to help the San Andreas Fault situation--although it's not been a proven solution 100% of the time either.

 
The best way to avoid the cracking is to run a sharp knife

between the cheesecake and the pan when you turn the oven off. I haven't had a crack since I saw this helpful hint. (Don't ask me where, my brain isn't that good these days!)
