I am making my favorite cheesecake recipe... see link... and it contains 3 tbl. flour. This is going to be for someone who needs it gluten-free. I was just going to leave it out, but am concerned about doing this because I don't know what the flour is actually doing in the recipe? Holding it together? Adding to texture??
