HELP - have to make a cakey brownie tomorrow at the restaurant

Chef said to just add extra flour and baking powder to our brownie recipe. I haven't baked them before and I don't even know the recipe. He also wants me to use half Mexican chocolate and half regular. Well, I don't know if this recipe uses melted chocolate or cocoa.

I can't remember the trice to making them cakey because I like chewy, not cakey.

Not sure this will help but I love this recipe and I always thought that it would be a great one to sell in a bakery?? Also, don't know where I came across it??



BEST BROWNIES

This is one of our most requested recipes.

Prep Time: 30 min.
Start to Finish: 1 Hr. 50 min.

Ingredients:

1 ½ cup (3 stick) butter or margarine, melted
3 cups sugar
2 1/2 teaspoon vanilla extract
5 eggs
1 1/2 cup all-purpose flour
1 1/3 cup HERSHEY'S Cocoa
3/4 teaspoon baking powder
3/4 teaspoon salt

CREAMY BROWNIE FROSTING (recipe follows)

Instructions:
1. Heat oven to 350°F. Grease jelly roll pan baking pan.

2. In medium bowl, stir together butter, sugar and vanilla. Add
eggs; with spoon, beat well. Stir together flour, cocoa, baking
powder and salt; gradually add to egg mixture, beating until well
blended. Stir in nuts, if desired. Spread batter evenly into prepared
pan.

3. Bake 20 to 25 minutes or until brownies begin to pull away
from sides of pan. Cool completely in pan on wire rack. Prepare
CREAMY BROWNIE FROSTING; spread over brownies. Cut
into squares.

CREAMY BROWNIE FROSTING
- 6 tablespoons butter or margarine, softened
- 6 tablespoons HERSHEY'S Cocoa
- 2 tablespoon light corn syrup or honey
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 3 tablespoons milk

In small bowl, beat butter, cocoa, corn syrup and vanilla until
blended. Add powdered sugar and milk; beat to spreading
consistency. About 2 cups frosting.
