It calls for 2 cups of sugar and 2 TBL water cook on low heat until it melts, abt 10 minutes. It is NOT melting! It's just gloppy/clumpy. This is my 2nd try with the suger what am I doing wrong????

Joy of Cooking recipe for Nut Brittle

1 cup sugar, melted in a skillet over low heat. Stir constantly until caramelized (310 degrees). Quickly stir in 1 cup toasted benne seeds. Pour candy onto a buttered platter. When cool, crack into pieces.

The recipe doesn't call for water at all.

I would say 10 minutes is the erroneous measurment in this recipe...

that is not enough time to melt 2 cups of sugar. Patience, Grasshopper.

What a mess! Thanks for the replies...

The measurement of 2 cups water and 2Tbl water is correct. It was a recipe in the March issue of Southern Living. I panicked because the sugar was hardening so I added more water. The sugar melted but the brittle never hardened,it just crumbled.I threw the whole mess out.
