Help me, please to find the way to use up canned goods

The thread about cleaning out canned food got to me, so I'm sorting by use-by dates. I have a TON of some like black beans or diced Hatch chiles. Wasn't there an item on this forum for putting in an ingredient list and getting recipe suggestions?

Black beans and hatches?! Make a big pot of chili!! Or a pot of black beans and serve over rice

 
Black Bean Quesadillas, Black Bean Patties with Cilantro and Lime, Black Bean Burritos,

Black Bean Soup, Gallo Pinto (Costa Rican Black Beans and Rice)....

 
I have complete, typed out recipes for the Black Bean Patties and Gallo Pinto. For the quesadillas

and burritos, I just wing it, but can describe what I do if you're interested.

The Black Bean Soup is the only one that's not T&T, but I have a few in my to-try folder, and can list them.

Let me know which recipes you want me to post.

 
Sure, the Black Bean Patties for sure and I'm just having trouble

understanding the quesadillas and I'm sure I'm just being dense. I have added black beans in my burritos when I have some I want to use up. I guess it would be the same thing? The beans (drained? and do you mash them?)with cheese? I'll look in T&T for them? I use a lot of canned black beans so I'm always looking for ways to use up if maybe I have a bit left. Happens sometimes with just 2 of us.

 
For the quesadillas, I sautee sliced onion, sliced red bell pepper, and garlic. Then I add salsa,

some spices, such as chili powder, smoked paprika, etc., some lime juice, and the black beans. (I never mash the beans in my burritos or quesadillas - I prefer them whole).

I add one tortilla at a time to a greased skillet, then add extra sharp cheddar, top with some of the bean mixture, fold over until the tortilla is browned on the bottom and cheese is melted. A more typical way is to add the cheese on top, brown the tortilla, then flip it over and brown the other side, but I hate flipping it over - it all falls out! At one point, I may have tried adding the cheese on top, then covering the pan, so the cheese would melt more quickly, but I don't remember. Or you could layer the cheese in the center of the mixture - I never do that, because I use very little cheese, and it would be lost. I've never tried baking them, but that may be a good method.

 
Lots of good recipes for ground turkey here in the archives, including one I make alot!!,

It's Stuffed Zucchini and Red Bell Peppers but I usually use red bells (or orange or yellow when they're available at a decent price) and often omit the zucchini. Don't have a problem with zucchini, I just really like this recipe with the peppers. Makes good leftovers the next day too.

Ahead of you there, I have a box in my car to drop off tomorrow!

I found out who would take extra canned goods and dried pastas when we had to empty out my in-laws home last year. Hope they don't mind the extra chilies along with the beans.

 
Thanks Meryl and Pat. These all sound really good and I love your

quesadilla mixture. I'll try it sometime. When I make quesadillas I spray one side of a large flour tortilla. I put that side down and then on one half of it I put my cheese, gr. onions, diced hot banana peppers and if I have cantaloupe I dice it small and sprinkle it on. It's a wonderful flavor combo. Sometimes I add a little salsa. What ever I feel like on that day. I just really never thought about adding black beans. Good idea. Then I fold over the half without anything on it. It's easy to handle that size and can be flipped over to brown on the other side easily. I always do in on the stove top and I have a neat pan that is a round and flat so it's easy to just slide off.
