Help. Pineapple Rouladen Mousse Torte

I purchased a large photo-filled dessert and pastry book last year and there was a pineapple mouse cake that was made by lining a bowl with slices of jellyroll cake and filling the center with a pineapple mousse, letting it set, then turning upside down to unmold the swirlled mosaic dome. I can't find the book now and need the recipe. Does anyone recognize this recipe, or the book it is from?
