HELP! Question about seven-minute frosting!

I'm in the process of making a coconut cake with 7 minute frosting and none of my cookbooks say whether this needs to be refrigerated. How stable is the frosting... will a few hours at room temp be ok? I hate cold cake, so don't want to keep in in the fridge before we eat it.

I haven't had one of those frostings in years but I don't remember refrigerating the cake.....

it should just fine. hopefull, someone who does make it will post for you.

 
and does anyone know how cream of tartar and corn syrup can be interchangeable??!

The recipe says to use 1/4 tsp. cream of tartar OR 1 tbl. corn syrup.

 
I may be too late to help you, but 7-minute frosting has a 'marshmallow"

texture and will stand up well at room temp. It would probably get sticky if refrigerated. I haven't made this frosting in a very long time, but it is my DH's favorite.

 
As much as I love buttercream frosting, 7-min. is perfect for this coconut cake smileys/smile.gif

I just know you're all anxious... heehee... so I did 3 samples. One is covered with plastic in the fridge, one in an open bowl in the fridge, and one on the counter at room temp. The results? All 3 are almost identical after 11-1/2 hours. The one in an open bowl in the fridge (as a cake would be), is a little drier. But all have held their shape and taste great.

 
Da nada... I have 2 cupcakes and one huge slice of cake for the first person who comes knocking...
