I have no clue what caribean food should be like. I know this is the place to get help. TIA for any ideas and recipes

 
Rec: Spicy Chicken Couscous

This might be a good option. A friend served this for us, and it is yummy (but can be spicy... so warn folks).

Spicy Chicken Coucous

2 pounds chicken breasts cut into one inch cubes
2 Tbsp Jamaican jerk seasoning (McCormick)

2-3 tsp olive oil
1 - 15 oz can chicken broth
1 box of plain uncooked couscous (10 oz)
½ cup golden raisins
½ cup dried cherries or mixed berries or cranberries

Dressing - Combine the following in large measuring cup:
1/3 cup orange juice
1/3 cup red wine vinegar
3 Tbps olive oil
¾ tsp salt
¾ tsp pepper
1/8 tsp ground nutmeg

Granish with:
¾ cup green onions sliced
1/3 cup chopped fresh cilantro
3 tsp sliced almonds

Combine chicken and jerk seasoning in bag and shake well. Marinate for 30 minutes to 3 hours or more. Heat oil in large skillet and add chicken. Cook 3-5 minutes on medium high until done. Add broth, bring to a boil. Add couscous, raisins and cherries. Stir well. Remove from heat and cover. Let stand 5 minutes. Fluff with fork. Place in large bowl are on large platter. Stir dressing well and pour over chicken/couscous mixture.
Garnish with onions, cilantro and almonds. Serve with green vegetable.
