Help! What dessert would you serve in this glass?

Next week I'm cooking dinner at a firehouse -- 8 firemen + 4 women who bought the experience as an auction item. World Market has agreed to donate the tabletop items and today, I found this awesome piece. It's originally designed as a soap dish but I want to use it as a charger for the footless wine glass & serve? Not sure what. A mousse of some sort?

Here's a look at the menu so far:

Croistini duo:

Roasted pear and cambozola

Fig and olive tapenade on goat cheese

Butternut squash bisque with sage & creme fraiche

Apple, celery, and hazelnut salad

Salmon wrapped in leeks, served on a bed of lentils

Dessert in a glass





 
Traca, Individual Trifle Recipe, Cheesecake in a Glass came to mind instantly,

Rich Chocolate Pudding, Pumpkin Pudding, Rice Pudding, Individual Tiramisu, and lastly Verrines in a glass.

 
Traca, what about Devis Food Cake Verrien? I made this last year for a

group that loves chocolate and it was the hit of the evening. I put out the glasses and all the "parts" and let everyone make their own and they had a blast. I had no idea they would enjoy that so much. It looked very pretty in the glasses. I am guessing you would probably want to make ahead for your even tho.

I saw a recipe the other day for a "free-form" cherry cheesecake in a glass - if you

are interested, I can try and look it up. Nice and light, and a simple ending to an elegant menu. Sounds great, Traca!

 
Nice menu- here is what I would put in the glass

I'd press mint leaves against the glass at the base then layer two kinds of mousse in two layers each. So you have four alternating layers. White chocolate with mint, dark chocolate. End with dark chocolate, dollop of whipped cream, mint leaf on top.

 
Vanilla gelato topped with grapefruit-campari granita and a meyer lemon madeleine alongside.
