morning for serving in the evening. I am not sure if I should be concerned about the humidity making it soggy.

I am visiting family in upstate NY, it is much more humid than Southern CA.

 
Are you then going to bake it again? I don't think it's a problem. I do it in

the Carolinas where humidity is a way of our life.

 
Sorry, I meant blind baking for fresh fruit tart. I am a bit out of my comfort

zone, which is good at a certain level. At my FILs house with a somewhat unfamiliar kitchen, plus using my phone instead of laptop as a resource.

My FIL requested I make veal parm for him while we are here, and has now ballooned to sit down dinner for 15. smileys/smile.gif celebrating a few birthdays as well and one of the b-day girls requested to learn how to make a fruit tart for part of dessert.

 
Use a very sturdy crust recipe like shortbread and brush with egg white before baking

I live where it is very humid and that is how I make sure I don't have a soggy crust. You can also put down some breadcrumbs before putting in the fruit.
