Help with my neighborhood cookout please---the hamburger

We have wonderful neighbors. I'm planning on a cookout in their honor when the weather cools,

The only food item I'm concerned with is the hamburgers. I buy buffalo which is quite lean. For the 2 of us we end up with flatter hamburgers and smaller after they've cooked down on the grill. This is ok for us but I'm not so sure it's going to be so great for our neighbors.

Can anyone give me some guarantee of some great hamburgers!!!

Here's the menu I have planned so far:

YOu may not like what we do, but we find bacon helps a lot. I always put prepared

horseradish in as well. Also, I use smoke flavouring and BBQ sauce. I like carrots because they add a quality & depth of flavour that still stands out among all the other junk I include.

I get lazy with the bacon and use real bacon bits.

That's just the inside of the burger. Here are my specifics:
1 lb. ground beef
1/4 c. hickory smoke BBQ sauce
2 T. bacon bits
2 eggs
1 slice bread, no crusts, soaked in 1/2 T. milk
pepper & salt
2 grated carrots
1 scant T. prepared horseradish
1 ½ t. liquid smoke

 
Yes you can Marsha. And here is another idea for hamburgers

When I make burgers I use 93% fat free ground beef then add finely chopped onion, low sodium soy sauce, an egg (just the yolk if I am making only 2-3 patties), garlic powder, pepper and thyme. They stay plenty juicy and hold together well.

If anyone will want anything but well done hamburger, buy a roast, chuck preferably and grind it...

yourself. If you don't have a grinder, a food processor will do an acceptable job and you can chop it as fine or as coarse as you want. I never use ready ground meat except occasionally for chili or red sauce. Buffalo is probably ok as it is not in that one humonguous mixture of ground meat which seems to exist out there.

 
Marg, I'm definitely going to try these for us first, as cool weather is a while away.

I hate horseradish but I do have a new bottle in my fridge.

A friend of mine made some pinwheel 'sandwiches' a recently. I told her I liked whatever spice she'd used in the spread, she said there was a bit of horseradish. I couldn't believe it because I hate the stuff.

So, I bought a bottle and thought, I'll try a tad of it sometime in something, so here's my chance. (((MargCDN)))

 
That's too bad. I think it's a major part of what makes this special. What about wasabi? Is it any

different for you?
