If you start with 2 cups of cream, how can boiling for 8-12 min reduce to 2 cups? I would think that boiling would reduce to 1.5 cups or there about.

"Combine cream, sugar, and lemon zest in medium saucepan and bring to boil over medium heat. Continue to boil, stirring frequently to dissolve sugar. If mixture begins to boil over, briefly remove from heat. Cook until mixture is reduced to 2 cups, 8-12 minutes"

You aren't just boiling the 2C of cream =You are adding sugar and lemon

so that is more volume. It really requires very little boiling (and it must be gentle) to produce a posset apparently--just minutes. So you will have approximately 2 cups.

Good explanation on video, but it really is reduce to two cups. The sugar added considerable volume to the beginning pont.

 
The chefs at our community make lemon posset and it is SO delicious--when looking

it up after having it the first time was A-mazed at how simple it is.

 
It definitely doesn't serve 4. Looked pitiful in 4 glasses. Double the recipe for 4 servings

Now that we have had it, it deserves smaller containers and I will not be doubling, as it is very rich.
