** Goulash-a-Roni **
Darrell's favorite comfort food, a mishmash of stuff that - together - tastes great! I don't normally cook with "cream of" ingredients, but this one is an exception. smileys/smile.gif
1 lb ground beef or ground turkey
1 cup chopped onions
2 ribs celery, chopped
1/2 cup chopped bell pepper, green/red/orange/yellow/whatever
1 cup sliced mushrooms (Darrell likes canned, I like fresh and usually add more)
1 cup shredded cabbage (optional, but good!)
5 to 10 ounces frozen chopped spinach (optional, but good! I put in a whole big bag, tonight.)
1/4 to 1/2 teaspoon crushed red pepper flakes or drops Tabasco, to taste (optional)
1/2 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon minced fresh garlic, to taste
1 teaspoon chili powder
1/4 teaspoon ground cumin, to taste
1 teaspoon paprika
1 (14 to 16 ounce) can tomatoes
1 (10 ounce) can tomato soup
1 (10 ounce) can cream of mushroom or cream of chicken soup
salt and freshly ground black pepper, to taste
1 cup milk
8 ounces uncooked macaroni
2 tablespoons grated Parmesan cheese
sour cream, for garnish
In a large pan or heavy pot (I use my Le Creuset pot), brown the ground meat; remove and set aside.
In the same pan, cook onions, celery, bell pepper, mushrooms, cabbage, and spinach until the onions are transparent, about 10 minutes.
Add the can of tomatoes, mash with potato masher until they begin to break up and are softened.
Add browned meat back into pan, then the cans of soup. Add spices and herbs, season to taste with salt and pepper, then add milk.
Bring combination to a gentle boil, then add the uncooked macaroni, cook for approximately 15 to 17 minutes until pasta has reached desired consistency. Stir in the Parmesan cheese and serve with sour cream for garnish.
Makes about 6 servings.
