Here's a link to some nice-looking leftover turkey recipes from Birmingham AL top chefs

this might be a good time to start a leftover turkey thread. Dawn's chicken enchiladas are great

with turkey. And those breakfast stratas make nice lunch or dinner dishes with the addition of turkey.

DD picked up my fresh turkey - they sent her home with an 18# to feed 3! Going to need these....

I have a local farmer I get a lot of meat from and I reserved it MONTHS ago told them then I only needed a small one to feed 3 people. Well, I made the mistake of sending DD to pick it up & I told her to remind them SMALL. She's ADHD & the farmers son (13ish I'm guessing) anxious to please her and me, gave her the biggest one they have I think - she looks just like me so I know he knew it was mine and he just loves waiting on me and bringing me multiple packages of meat to pick the ones I want. He knows I have certain criteria - I WANT fat on my meat and I like the ugly pork chops with a bone in them for the sweetest meat. But 18# of turkey for 3 people??? Better be a darn good turkey! Heck - I could split that sucker down the center and cook half now and half for Christmas - half would still feed our larger gang then which goes up to 7.

LOL, all I can do is buy a Butterball from the Winn Dixie and relive my Mom's T'ksgiving dinners.

Someone told her that to test if the turkey was done, prick the leg and if the juice runs clear, not pink, it's cooked. She misunderstood, and interpreted it that if there was NO juice when you pricked it, it was done. I remember her pricking that bird until there was no juice present. Did we have very dry turkey? YES!
