Here's my dilemma. I have a semi friend, (more than an aquaintance) who

has, in the past, told me how a group of her friends got together each year and brined olives which they then gave as gifts. Today she surprised me with a quart jar. She said to drain the brine, rinse well, then add some olive oil and herbs. She also said it should be good since it's from 2004.

I just opened the jar. It resembled opening a well carbonated bottle of soda. While it didn't "fizz" over the top, it "boiled" for at least a minute. Is this supposed to happen. I hesitate to ask her, don't want to seem ungrateful. Don't want to die, though, either. Should I ask or toss?

 
I wouldn't eat them. if there's fiz and it's not champagne or soda, then something is

alive and happy in there and obviously alive.

I would tell her cause she's gonna ask you how you like them. it's a lovely gift but not worth the medical bills and risk to your health sweetie.

 
So I'm picturing the pulp fiction magazine cover, with gasp! CynUpNY cowering in the corner

of the kitchen, pearled and aproned, fingers pressed tightly over her mouth, stiffling the scream that would cause her souffle to collapse, watching with terrified eyes as the olives ooze and bubble out the jar and down the side of the cabinet, like a swarm of insidious green aliens armed to take over our beloved country, one kitchen at a time.

Saw her this morning. She said it's supposed to fizz and that she should have mentioned it. It

is 9am est. I will be eating 1 olive within the next 5 minutes. If I don't post again you will understand what happened. It's been a pleasure knowing all of you.

A friend and I decided to can black bean soup.......

I had a left over ham bone and ham pieces. Well, we stterilized the jars, made the soup, prossessed in a water bath for the required time.
Well, the caps did that popping thing, but the jars kept "boiling" for a long time - days. OK we were young and stupid......
I gave a jar to a merchant marine friend who was going back to the ship via Taxi. He called later to say that the jar had spilled in the cab and STUNK.
Shortly after that I bought a pint of "reduced-for-quick-sale oysters. When I took a can opener to them and put a tiny hole in the pastic top, the WHOLE contents shot out of the tiny hole all over the ceiling!
Needless I am very weary of anything that boils or is likely to shoot up in the air.

 
Did she say WHY it's supposed to fizz?

I've been thinking about this since yesterday and couldn't figure it out. The only fizzy foods I know are carbonated drinks and pop rocks. (remember pop rocks?)

Curious minds want to know what creates olive fizzies!

 
Thanks alot, Missy!! It actually tasted wonderful. Kind of like a Scicillian olive. I didn't ask

her why (dumb, I know). But I will when I see her later. Will let you know...if I don't...you know.
