Hey Barbara in VA - Can you share your Oatmeal Bars recipe, please

Scottish Raspberry Oaties

Not sure what Barbara's are like but these are KILLER and they are good with jam instead of fresh berries also.

1 cup self-rising flour
Pinch of salt
1 cup butter
1 cup rolled oats (I like to use the thick Bob's Red Mill brand)
1 cup sugar
+/- 10 ounces fresh raspberries (or frozen, or jam)

Grease jelly roll pan (I use 9x13 pan). Preheat oven to 375.
Mix all ingredients except the raspberries. Press half of the mixture in the pan. Spread raspberries over squashing about 1/2 of them when using fresh). Then crumble the remaining mixture over the top. Bake approximately 20-25 minutes.

You can use other fruits - just consider their juiciness and adjust accordingly. You can also sprinkle some grated dark chocolate or spread melted dark chocolate over the crust before topping with berries.
