Hey Chezz, tried your TrueLime idea in my mini Key-Lime bars - Woohoo!

I offered to bring the birthday desserts to my dad's 70th surprise birthday party last Saturday. Made Salted Fudge Brownies and mini Key-Lime bars. The guests loved the brownie bites (I cheated and used Ghiardelli Fudge Topped Box mix - gasp!) but didn't tell anyone they weren't from scratch. Sprinkled some sea salt on top.

The Key-Lime bar recipe is from a Food Network show, The Neelys. Used 10 packets for a 9x13 and another pan 1/2 that size. People loved the zing-factor. Definitely gave it the lime zing without tasting artificial or messing with the structure of the bars.

Here is another use for TrueLime- Thai Spiced Peanuts. I make these often

THAI SPICED PEANUTS
Makes 2 lbs

20 small whole dried chiles
6-8 cloves garlic, minced
2 T olive oil
2 lbs salted peanuts (Hoodys Peanuts from Costco)
1 tsp coarse salt
1 heaped tsp chili powder
1 Tbsp chopped Lemongrass
2 packets "True Lime" powdered lime
1 tsp lime zest
4-6 Kaffir Lime leaves- whole

In a wide frying pan combine chiles, garlic and oil Cook over medium heat, stirring constantly, for 1 minute. Add Peanuts. Stir over medium heat until slightly browned (about 5 minutes) then sprinkle the rest of the stuff over them and mix in. Turn heat off and let the peanuts sit in the pan until cooled. Pour into container with Kaffir leaves at the bottom and let sit for 24-48 hours. Crumble Kaffir leaves into the mix.

This sounds wonderful! Ignorant question..I am not that familiar with whole dried chilies...

I generally use red pepper flakes in recipes. What are small whole dried chilies? TIA,
