I was all out of curry powder! ARGGH! I was sure I had some, but when I went to make the marinade, I searched and searched, and couldn't find the curry powder.

So I googled, and put together something similar pretty similar:

1 cup yogurt

Juice of 1 lemon (3-4 tablespoons)

1/4 cup olive oil

1 teaspoon salt

1 teaspoon herbs de provence

4 boneless, skinless chicken breasts

Mixed everything together, and placed in a shallow baking dish.

Baked at 400 degrees for 40 minutes.

OMG, it was so moist and tasty.

But I have a couple of questions. I used a small baking dish, and the chicken fit pretty snugly in it. Your recipe calls for a baking pan, and basting the chicken a couple of times. Do the juices/marinade run off, or is there a lot of saucy stuff surrounding the chicken?

When the dish was done, I had a bunch of clear liquid floating on top (I assume it was the olive oil, lemon juice and the chicken juices), and the yogurt formed little curds. The curds were quite tasty. Does your recipe do the same, and do you pour all of that over your chicken?

I'm making this tonight. It sounded like a good cold night dinner. Joe, by baking pan do you mean a baking sheet with 1 inch sides or a roasting pan with 2-3 inch sides?

 
Hi Sandy, Bone-in chicken cooks for a much longer period. So the yogurt coating firms up

and browns a bit around the edges. On a baking sheet, the liquid evaporates more and the pieces have space around them.

But you've found that the yogurt makes the chicken moist either way, and I hope you tried the rice recipe!

If you have ground turmeric plus maybe cumin, ginger, coriander and cayenne you can make up a quick curry powder.

 
Hi Pat, I used a rimmed baking sheet, or "jelly roll pan." Has anyone ever made an actual jelly roll

in a jelly roll pan? Why do they name it after something so obscure?

Anyway, I'm sure a roasting pan would work well, you just want some room around the chicken pieces.

 
I believe she posted it on Gails originally. I actually made it many years ago. It was a huge hit

Loved how you can "hide" any cracks. This was a fun recipe and looked beautiful!

I made one for Thanksgiving and it was gone in a flash. I ended up making another. Gone again.

Then, when we got to San Diego for Christmas, my relatives started hinting that they hoped they'd see a pumpkin roll or two before the holiday was over!

Simple and delicious. A very fun recipe.

Sandi, I made it too and cooked it on a sheet pan. Didn't have any of the yogurt curds/juices

you mentioned. I used all chicken thighs and they were divine!

I second Joe...I hope you tried the rice recipe. I'm inclined to say I liked the rice even better than the chicken! I didn't use the basmati (not a big fan of the texture) but regular calrose rice, which is slightly sticky. My mango was bad and I also was out of nuts, and I was thrilled with the dish. Most likely, I'll repeat the changes above.

 
Made this last week and am about to make it again over the weekend. The chicken was delicious - I

was taking it to my daughter's and it was just underdone so I finished it up there. Some I had
left home for myself (DH is seriously ill in hospital and I am trying to keep some kind of
food order) and I put it in the oven the next day and forgot it. It was way overdone but so
delicious!!

I made the rice sans mango and loved that one too. I have already made it again.

This is a wonderful pair!!

I've done Julia's Buche about 4 times in my life. Fantastic, but to name a pan after?

I use my rimmed baking sheets for everything--cookies, sheet cakes, buches, roulades, rolled souffles, roasting, baking bread, carrying hot things, drip-catching, etc. I have a stack of 12 on top of my fridge to grab for anything.

Anything but a jelly roll. I love jelly donuts. Is it similar?
