Randi, it was GREAT! Easy, satisfying, and a bit unusual. I would only add a little cilantro

next time as a garnish. I can also see using a red bell pepper for color, along with the poblanos. Definitely a keeper.

We had it with a green salad with tomato, red onion and avocado.
