...made from leftover ham bones.

I just simmered two ham bones and a bunch of ham chunks into a wonderful ham broth. I strained out the solids and will shred the ham once it cools.

Can you walk me through your version of ham and pinto beans? I've got enough for a standard batch of split pea and ham soup, but still some left over for something else.

Nothing fancy

I just throw in a handful of thinly sliced onion and a clove or two of thinly sliced garlic when I put them on to cook, along with a handful of ham.

I have done ham broth like that too, but one time it made whatever I cooked with it too salty. The ham broth and shredded ham would be fabulous to cook southern style collard greens.

I usually save my ham bone for cajun red beans and rice.
