Hey Meryl - Tried your Stuffed Roasted Tomato recipe you recommended - YUM

Tessie! I made this last night, and loved it, but used Romas, against my better judgment, as

they're usually tasteless. I should have used Camparis, which are my favorite tomatoes, and I always have them in the house, but... I thought they would emit too much juice, so I went with the Romas. Luckily, the filling was so delicious that it almost made up for the bland tomatoes.
I'm glad you mentioned you used the Camparis - will definitely do the same in the future!

 
about the juice...

After scooping out the tomato seeds/goo I took a wadded up paper towel and pressed into each tomato half. I was in a hurry and didn't have time to drain them on a paper towel.

Although they pretty much flattened out after roasting they still had a good flavor.

Imagine how good they'll be this summer w/ bigger, meatier tomatoes. -T
