Squash Casserole - Hominy Grill, Charleston, SC

This is so good!!!

Ingredients: 2 Tablespoons butter; 3 zucchini, thinly sliced (about 4 cups); 3 yellow squash, thinly sliced (about 4 cups); 1 cup onion, diced; 1/2 cup celery, diced; 1 clove garlic minced; 4 beaten eggs; 1 1/2 cups grated cheddar cheese; 1/2 cup grated parmesan cheese; 1 1/2 tablespoons chopped fresh basil; 1 1/2 tablespoons chopped fresh parsley; 1/2 teaspoons Tabasco; 1/2 teaspoon salt; 1/4 teaspoon freshly ground black pepper; 1/8 teaspoon nutmeg; 1/4 teaspoon sugar; 3 cups dried breadcrumbs.

Preheat oven to 350 degrees. Grease an 8x8 baking dish, dust with bread crumbs and set aside.

Heat butter in a large skillet over medium heat. Add the onion and celery and cook, stirring occasionally until edges of onion start to turn golden brown. Add garlic and cook another minute. Add squash and cook until tender and slightly browned, approximately 30 minutes. Set aside to cool.

In medium bowl,combine the beaten eggs, cheeses, basil, parsley, Tabasco, salt, pepper, nutmeg and sugar. Set aside.

Pulse 1/3 of the squash mixture in a food processor until it is chunky-smooth. Add back to the bowl with the rest of the squash and the egg and cheese mixture and stir to combine.

Pour the mixture into the prepared baking dish and top with an even coating of the breadcrumbs. Bake for 35 to 40 minutes, or until the egg sets and the casserole is slightly puffed.

Hi Pat, is there a recipe for the banana starter or is that meant

as in the start to the meal? If you have the starter, as in bread, would you mind posting it? I hate hate hate bananas, but I love banana bread, go figure. Thanks!

"Sliced and griddled in butter, this is easily one of the most popular Sunday brunch items at Hominy Grill. The oats give it a heartier texture than most banana breads. We use really ripe bananas - just when most people would throw them out, we think they're perfect. And if the bread sits for a couple of days, the banana flavor will really develop."

For 1 10 inch loaf, use 1 1/2 cups all purpose flour, sifted; 2 teaspoons double acting baking powder; 1/2 teaspoon baking soda; 1/2 teaspoon salt; 4 tablespoons unsalted butter, softened, plus more to grease the pan; 1/2 cup dark brown sugar; 1 teaspoon vanilla extract; 1 egg; 3/4 cup whole oats; 1 1/2 cups mashed ripe bananas (3 to 4 medium); 2 tablespoons water; plain bread crumbs to dust the pan.

Preheat the oven to 350 degrees. Grease a 10 inch bread pan and dust with bread crumbs. Set it aside.

In a medium bowl, sift gegether the flour, baking powder, baking soda and salt. Set aside.

In a large bowl, beat the butter until creamy, about 30 seconds. Add the sugar and the vanilla and beat until well mixed. Add the egg and continue beating until fluffy and pale in color. Add oats, mashed banana, water, and beat until smooth. Add the dry ingredients and beat until just combined.

Scrape the batter into the pan and bake until a toothpick inserted into the center comes out clean, about 55 to 60 minutes.

Cool the pan on a rack for 5 to 10 minutes before removing loaf. Let the loaf cool completely on the rack.

 
It's a great place, isn't it Pat! Did you get their cookbook? Did you know they have

a sister restaurant (actually brother restaurant) --called Early Girl in downtown Asheville, NC. Each brother owns a restaurant...the same banana bread/pumpkin bread starter was the give-away.

 
thank you thank you! This sounds very much like the dish served at Ma Hopkins in Pensacola. It was

a mystery to me how they combined the ingredients. I must try this very soon, or at least when the zukes start hitting the farmer's markets.

 
Yes, I bought their little cookbook!

I didn't know about the Asheville restaurant! We (10 of us!) sat outside in the courtyard and loved it, heat and all! Hominy was by far the favorite eaterie of the week.
