Hindi dietary restrictions

Hi friends. I’m back to cooking again. I just got burned out for awhile.

My DH has invited co workers over for dinner next week. I’ve found out that they are Hindi from India and have dietary restrictions. They are total vegetarians so no meat, dairy, or fish is allowed.

Any suggestions where to look on the internet for a few recipes? Should I even try to cook in the Indian style or just feed them American style vegetarian dishes?

Does a Hindi drink wine or beer?

Your thoughts are really welcome on this one.

Thanks,

Peg

I would stay away from cooking Indian food unless you have

a recipe that you make all the time. Indian food can be very time consuming and can require many different spices and it's probably not worth the expense of buying them just for one meal. I've made beans and greens and served it over rice. The addition of some hot peppers would provide some of the heat frequently foung in Indian food. I make fairly easy side vegetables to go with curries but none of these alone would make a complete meal. I have also made eggplant rolettes using mashed tofu instead of ricotta cheese, serve with tomato sauce and pasta.
Not allowing dairy makes it harder. If i think of any more I'll let you know.

Bout time you were back here. I always think that we should serve 'our' food to those of other

ethnic backgrounds. After all, that's likely what we do best, and they do their own best.

I have some good vegan salad and soup recipes if you want any?

The salads are variations on some of the couscous salads posted here by Charlie, and the soup recipes use coconut milk to make them creamy. Let me know if there is anything you would like. I would steer away from Indian food and go with some good vegan recipes. Great to see you, Peg!

How about pasta with a nice vegetable sauce, salad greens with vinaigrette, French bread,

and fresh fruit for dessert? I like to put nuts in the salad, and this would provide some protein. The vegans I know are not Hindu but they do appreciate fresh produce, and I imagine your guests would too.

I have no idea about the alcohol, but I have known of Hindi who avoid onions. Can your husband discretely ask?

Some suggestions: "Vegetable Couscous Paella" from Bon Appetit...

"Black Bean Patties with Cilantro and Lime" from Cooking Light (has very small amount of cheese, which can be omitted)
"Curried Couscous Salad with Dried Cranberries"
"Thai-Style Pasta Salad"
Let me know if you want me to post any of these recipes.

Two more ideas (no specific recipes):
Vegetable Lo Mein
Moroccan Vegetable Couscous (traditional Moroccan couscous without the meat)

Yoo-Hoo Peg!!!

I, too, have REALLY missed you here (or there). I hope you will be back for a while.

You will (always) remain on my email list because I think it will take that long to perfect your beautiful cookie decorating! And, I will constantly need your encouragement and advice!!

I will keep you posted on my progress.

BTW . . . for those of you reading . . . Peg's the BEST cheerleader.

Thank you friends!!! I feel SOOOOOO........

blessed by your kindness.

Well, I cooking an American Vegetarian dinner.

I'm starting with a carrot soup and bread. My DH wants a Vege sandwich (homemade bread with 8 veges) and garlic spiced Sweet Potato oven fries. Dessert will be a baked apple with clove and cinnamon spices served in a little tortilla bowl with crystalized ginger sprinkles.

Everyone should go home full and happy.

Thanks again folks you have really warmed my heart.
