Holiday Cheese SpreadFrom Woman's Day
Active Time: 5 minutes
Total Time: 35 minutes
INGREDIENTS
1 brick (8 oz) 1/3-less-fat cream cheese (Neufchâtel), at room temperature
1 log (5.5 oz) herb goat cheese, softened
2/3 cup sun-dried tomato pesto
You also need: any shape cookie cutters (we used a 33/4-in. stocking cutter)
Decoration: pine nuts (pignoli)
PREPARATION
1. Mix cream cheese, goat cheese and pesto in a bowl until well blended. Cover and refrigerate until assembling.
2. Trace outline of cookie cutters on cardboard. Cut out; cover with foil or plastic wrap.
3. Shortly before giving, place cutters on covered cutouts and pack cutters with cheese spread. Decorate with pine nuts. Wrap with plastic wrap.
Store: Refrigerate cheese mixture (Step 1) 2 weeks.
You can also pack the spread in crocks.
