My dog Hope and I are having a lazy pajama day today. catching up and easing into our new life. I couldn't let the 2 ripe pears go to waste, so I baked this BHG Apple cake using 2 pears and 2 apples. It sure smells good!
2 beaten eggs
3 cups a/p flour
2 tsp lemon peel(I used orange)
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon(used 1 1/2)
1/4 tsp ground allspice(cardamom would be good)
1/4 tsp salt(forgot)
1 c white sugar(used 3/4)
1 c brown sugar(used 3/4 dark)
1 c vegetable oil(used 3/4 and some OJ)
1 T vanilla
3 cups chopped peeled apple(pear/apple mix)
1 c chopped pecans, toasted(I just sprinkled pecans on top and let them toast while baking)
(I added 1/2 cup light raisins too)
1. allow eggs to stand at room temp for 30 minutes. meanwhile, grease and lightly flour a 10 inch tube pan(I used a springform tube pan), set aside. In medium bowl, stir together flour, lemon peel, baking powder, soda, cinnamon, allspice and salt. set aside(why do they write this?)
2. In a mixing bowl combine sugars, oil, eggs and vanilla. beat with electric mixer on medium speed for 2 minutes. Add flour mixture and beat on low till just combined. fold in apples and pecans(I put pecans on top)spoon batter into prepared pan.
3. bake in 350 oven for about 1 hour or until a wooden toothpick inserted near the center comes out clean. cool cake on rack for 10 minutes. remove from pan. cool thoroughly. sprinkle with powdered sugar before serving.(I'm tempted to drizzle with caramel sauce)
Now, you all know I used just one bowl and did the wet ingredients first, then added all the dry. anyway, it smells great. hope it tastes great, tweaks and all. I have to decide where to take it now.
