HONEY KISSES - My grandkids and family's favourite Christmas cookies.

Honey Kisses

4 eggs

1½ cups sugar

½ cup butter

1 cup honey

5 cups flour

2 teaspoons baking soda

1 teaspoon cloves (scant)

1 teaspoon cinnamon (generous)

2 tablespoons cocoa

Beat eggs and sugar. Cut in butter. Add honey. Mix dry ingredients together. Knead together wet and dry ingredients. Refrigerate for 3-4 hours. Roll into small balls (about 1 inch balls). Bake at 350 degrees for10* to 12 minutes (depending on oven). Ice with sugar/milk frosting.

*Cookies turn grayish when first baked (about 7 minutes), then turns light golden brown after about 10 minutes. Still feels slightly soft but gets quite firm after cookie cools. Do not overcook.

Icing:

1½ cups icing sugar }

3 tablespoons milk } Stir together well

1 teaspoon vanilla

until smooth. The frosting consistency is similar to a glaze. Color with powdered food coloring for decorating cookies. You may purchase the powdered food coloring at cake decorating specialty stores, Walmart or Hobby Lobby.

OR: (I USED THE FOLLOWING)

1 cup icing sugar

1 tablespoon light corn syrup

2 tablespoons water or milk (I used milk)

1 teaspoon vanilla (didn't use – darkened the glaze)

Mix well – apply with knife – hardens and shines beautifully.

 
This looks really good, and an interesting mix of flavors too. I decorate two cookies...

...each Christmas: a gingerbread cutout cookie and the Merry Christmas Cookies from my youth. The Merry Christmas Cookies are flavored with honey and lemon. We love these, so I'm thinking this honey-spice cookie would be wonderful as well.
