This was the menu served by a good friend of mine, whose son was married in their backyard. He said the menu was perfect because nothing had to be kept warm. I think it sounds wonderful. No recipes, but you certainly can find some that would work with this menu idea.

We offered a red, a white and a rose` wine; beer and assorted soft drinks, juices and water; it was hot, 93 F
Hor D'Oeuvre Station
Whole poached salmon/ remoulade sauce with assorted crackers and bread; the salmon was covered with thinly sliced cucumbers
Wild mushroom stuffed Brie en croute with seasonal fruits
Buffet Entree
Chilled beef tenderloin with ancho chili jam
Chilled pork tenderloin with mango salsa
Greek pasta salad (feta cheese and kalamata olives)
Mesclin salad
Grilled chilled seasonal vegetables
Assorted rolls and breads
Dessert
Chocolate and Strawberry cheesecake
Coffee
