How best to convert cake recipes to cupcake size? I'm talking bundt or coffee cakes, etc.

I've noticed that of the food donations I take to the free lunch spot in town, the favorite is cupcakes. I've taken sheet cakes, rice pudding, bread pudding, banana bread, cookies, brownies...but iced cupcakes make folks actually smile when I walk in the back door.

The lunch already includes a dessert, usually left-over bakery items from the major grocery stores like Ingles or Walmart, so my treat is an extra they can walk out with.

Typically I make a box cake mix and my own icings, but I'd like to make the Beaujolais coffee cake or some of the lovely swirled bundt cakes here. Is it just a matter of using a cupcake pan or do I need to adjust the recipes? I really hate wasting food and I tend to screw things up. A lot.

I did try making the coffee cake in its regular 11x13 pan and cutting it up for servings, but it was too crumbly and messy. I'm looking for hand-held items.

Have you ever seen a "pound cake" cupcake? I haven't. Makes me wonder if there is a good reason for that.
