How do you serve Queso Blanco - Not Queso Fresco, Cojita, or white American Cheese

Have a large chunk and have been frying slices for making quesadillas. It doesn't melt the way I imagined when I bought the Costco package. Colleen

 
I bought that once and figured the cheese was bad because it wouldn't melt. Didn't think to

research the reason.

 
I was very surprised, too! Cheese that doesn't melt! Huh!

I bought 2 big packages at Costco thinking I'd make queso. Tried to use it with Judy's Elotes/Esquites - definitely NOT a substitute for cotija cheese smileys/frown.gif I HAVE had success making tasty quesadillas by first frying a slice of cheese with meat and veggies, warming the tortilla over top and then scooping the mixture inside. So I only have a small piece left. Was hoping someone had a T&T recipe. Colleen
