How does fresh, purchased pizza dough with 8/4 use-by date make sense?

How long do you keep pizza dough that you have made or purchased fresh? Do you ever freeze your fresh dough? We usually use frozen dough balls to make our grilled pizzas so I am unfamiliar with fresh. The pizza dough was given free-with-purchase and I greatly appreciate your help with this wonderful dilemma smileys/wink.gif Colleen

 
Grilled BBQ chicken pizza - outstanding

Grill pizza dough on medium high for about 3 minutes, until top is bubbly and bottom is lightly browned. Flip partially cooked dough onto original parchment lined tray, lower grill to medium low and work on making your pizza. Top the browned side with about a 1/2 cup of Sonny's Sweet BBQ sauce mixed with fresh or dry cilantro, rotisserie pulled chicken mixed with more BBQ sauce, pieces of bacon, sliced green onion, red, yellow and orange pepper strips, fresh corn kernels, a liberal sprinkle of fat-free cheddar cheese (and about 2 TBS of 2% cheddar), and more cilantro. Grill for 3 - 5 minutes until bottom is the way you like it! Colleen

 
Yes I freeze homemade dough, should be able to do that with purchased dough

Without looking at the label at the ingredients it is hard to tell about the use-by date but chances are that there is some sort of preservative in the dough. Unless it is sourdough- then I could see it with a longer life.

I have kept homemade dough in the fridge for 5 days successfully- never tried for longer.

Ended up making 2 more pizzas

We liked the frozen dough ball pizzas better than the fresh dough but that could be because the fresh was around several days before using. Our 2nd batch grilled pizzas were tomato, basil, goat cheese with a balsamic glaze and a ham, pineapple, red pepper and mushroom, with a light sprinkle of mozzarella. Both were liberally topped with basil and green onions on a tomato sauce base. Enjoyed both over 2 days along with Ron's Meatball(-less) Minestrone. Colleen
