How long before rolling out pastry dough should I take it out of refrig?

Best cold straight from the fridge. Less cold = harder to work with.

Depends on if/how much butter is in it. Mine is all butter & hard as a rock for about 15 minutes.

Maybe depends how warm a day it is, most times a quick knead is all 4 me. Maybe I have hot hands!

I whack mine a few times with the rolling pin--Julia showed us on one of her shows. It works!
