How long can I refrigerate pie dough?

Here I am on a Tuesday evening with a couple of pies to do for Thanksgiving. I would like to make the pie dough ahead of time, instead of the rush on Wednesday night. Is it possible to refrigerate the dough until Thursday morning? Or will freezing it be better?
