How long do you keep home-made salad dressings?

I made the lovely Cranberry-Walnut Salad recently and kept on using the exta for another week? When we make a creamy dressing, we tend to keep it around for awhile too.

How long is safe?

I don't know how reliable this is, but we keep ours for

months and months! As long as it's refrigerated. Most salad dressings have some amount of vinegar in them, I think, which retars bacterial growth.

Also, with the acidity of the cranberries, I think that one would keep for even longer.

I think the worst that would happen would be a little mold(?). Correct me if I'm wrong tho! ;o)

 
Anna, my rule of thumb is that if the individual ingredients can be kept in the panty indefinitely

(vinegar, oil, salt, pepper, dried herbs, mustard)

then surely the dressing can be kept in the fridge indefinitely.

The exception here would be fresh herbs and cream, which would probably have their lives prolonged by the acidity, but for safety's sake, should be used within a few days, the same rule as their fresh state
