How much flavor will I lose if I leave out the piment

I think Ang is correct, I'm surprised he didn't specify a type of pimenton. Aleppo pepper has a

bit of a smoky taste. If it were me, I'd sub some smoked paprika for it. Or chipotle, a pinch of it could be used instead of Aleppo. It's a bit stronger, but so good.

 
Cook's Thesaurus says that a good substitute for aleppo is

4 parts sweet paprika and 1 part cayenne. Pimenton is Spanish paprika and it can be sweet, spicy or smoked. I have the smoked here at home, it is very good.
