How soggy would these get if I made them the day before serving? I've been searching

Cyn, I am going to link her original post that states she made them 5 days ahead and refrigerated

them. At the end of the post hit the last sentence where it continues and you will see that she states that they were better refrigerated.

saw that but took the comment to mean that she had made them 5 days before posting the recipe. I did

find another comment by her saying that she would not make them more than a day or two before serving so I think they'll be ok overnight. Thanks, Gay.

 
cyn, I made these on Wednesday and brought them to work today. they are softer today than Wed, but

still VERY nice. They bake up kinda crispy, like the CI cobbler topping and then soften over a few days. If you want them "crispy", then I would serve them on the day or day after baking. Some like them soft and cakey, and this is what happens after a few days---but they are not soggy. I'm thinking about pre-baking the crust a bit before putting on the berries for an even crisper bottom, but they really are nice w/o the pre-baking. I might make them again next week to enter into the second week of the Fair.

Here are my notes: I added 1/2 tsp vanilla and 2T water to the dough---it just seemed too dry( I made the dough in the food processor). I used 3/4 c white sugar and 1/4 c brown sugar. I used 3c blueberries and 1c rhubarb in the filling and added 1/4 cup oatmeal and 1/2 tsp cinnamon to the topping(not sure I would add the oatmeal again). I think using orange zest and a mix of lemon/orange juice would be nice too.

 
cyn,unless it's really hot, I would leave them on the counter just loosely covered if just overnight

I think this would keep more of the crispness than if you refrigerate, and I don't see any need to refrigerate for just overnight. I didn't refrigerate mine, but it's cooler here.

 
It's in the oven, Ang. I didn't tweak much 'cause I like to do the initial recipe as written.

I did use a bit of brown sugar and vanilla though smileys/wink.gif

Nice pictures (or is it just my new reading glasses?) - anyway, I'm making

them tomorrow - they look great (the blueberry bars) and I have lots of berries left.
