How to de-couche a baguette...video on techinque...I did this today, great result!

and I have been baking these loaves for 30 years! Never to old to learn new tricks. I never couched before, thought it too much trouble, boy was I wrong! Such a simple and slick trick. Gotta use it in the future for my. . .

french and italian breads. I would have never thought of it!, but then I usually do not couche my baguettes, as I mostly put them on a cookie sheet to bake (the cookie sheet goes upon a heavy, thick, high-fired large ceramic "board" in my oven).

It is THE way if you have a very wet dough to transfer to pan without distorting or delating them.
