I have a modicum of bread flour, but mostly I use KA AP flour.
I also have a bag of Bob's Red Mill gluten. When my small bit of bread flour is gone, I will use this chart instead of my off-hand 1 teaspoon of gluten per cup of flour method.

 
Outstanding, Tess! Have been compiling formulas

from different bakers for the limited flours I have on hand, with King Arthur being the final say on the matter. Lots of wonderful recipes queued up, just haven't started baking. Colleen
