How to make fizzing 'pop rock' candy and decorate with it. [CakeCentral]

I will never forget biting into a savory shrimp dish and getting pop rocks

They bought premade ones without any flavoring then would put herbs and spices in a container with them to flavor them like lemon (peel), tarragon, etc. and put them on the dish without listing them so that it surprised you. My dining companions didn't know me that well and thought I had lost my mind when I said there were pop rocks in my dish. The chef had to come out and tell them I wasn't crazy.

So let me know how this goes because I have been so tempted to buy the ones they use but it is a HUGE quantity.
