how to make the cream cheese mints

welcome jwerth. I'm sure you'll get lots of ideas. My Mom added some peppermint oil to a cookie

for the holidays. It was a plain vanilla sugar cookie, but that hint of mint was so wonderful, especially after they "aged" for a week or so. I'm afraid I don't have the recipe handy so I don't know the amount, but I would start with a few drops and taste the dough. It probably loses a bit of strength with baking.

Amount Measure Ingredient -- Preparation Method

5 tbsp. butter
1 lb powdered sugar
1 tsp. spearmint or peppermint
Desired food colors
2 tbsp. cold water

Melt butter and add food coloring and extract. Stir in powdered sugar and water and knead until smooth. Roll into small balls and press with fork to flatten. Place on waxed paper or cake rack for several hours to dry.

Hand Molded Mint Recipe

These are the molded mints you see at weddings and showers. They are made by pressing the mixture into special shaped rubber molds that you can buy at cake decorating/candy supply shops. The hard plastic molds you see are not meant for mints, but are hard candy molds.

Mints

Into food processor put:

1 8 oz block cream cheese, softened to room temp
1/2 tsp butter flavoring
1/4 tsp peppermint extract
Food coloring - paste or gel, in whatever color you want.

Pulse to blend dye and flavorings thoroughly into cream cheese.

Add:

1 2-lb bag powdered sugar

Pulse processor until sugar is mixed in. Dump on a sheet of waxed paper, if necessary, and finish working sugar in.

Roll a rope of mint dough, and pinch off pieces large enough to fill your mold. Roll these little pieces into a ball then drop into a bowl of super-fine granulated sugar. Roll ball in sugar, then press into your mold. Pop candy out of the mold from the back onto your cookie sheet.

*I line them up on a large cookie sheet on waxed paper, making rows, so that I can easily count how many I have.

Let dry a couple of hours then store in airtight container or box. (or freeze, if you are making ahead of time)

I bought my molds at a local supply house but you can also find them on the sugarcraft site. She says they have ALL the molds that are made, but I have found a few others here and there. Make sure you buy the RUBBER molds.

I keep these in the freezer but they keep a long time in the fridge....

and they can sit out at functions a long time, but they won't last that long. smileys/smile.gif

I'm sure I've posted within the last bit. Maybe not a recipe, but a comment. It's been a hectic year around my house but maybe things will slow down soon. My youngest daughter and granddaughter moved home with us - so I've been quite busy.

this is just so perfect---it must be exaclty what happens. I've had many FP jams that tell me when

something is done. I just loved that part of the directions!! please don't change.

 
The one I always make is..

a 3 oz package of cream cheese with a few drops of flavoring (amount depents on the flavor as well as the brand I find), food coloring and a 1# box of confectioners sugar. Mix until smooth. Pat into molds that have been brushed with cornstarch and turn out.

I like to let them airdry at least 1/2 day on each side before boxing and storing.
