How would YOU use the chili-mango vinegar from Trader Joe's?

up in post 6755 I posted a recipe for a bulgur salad with cumin viniagrette.

It didn't call for vinegar, but I felt it needed a bit more punch so I added some regular vinegar to taste. I think this vinegar would be lovely in that recipe. I have also used couscous in this recipe.

 
I have a Mango Chilie Vinegar from Wine Country Kitchens and here are some suggestions...

Marinate fresh chicken or pork tenderloin prior to grilling

Whisk in some EVOO for spinach salad dressing

Toss with crisp Napa cabbage, toated almonds and parsley

Blend with plain yogurt and spoon over fresh fruit

Make a vinaigrette with Evoo and a tad of mustard and coat a green salad

 
I was thinking more about this - I think it would be good mixed with some mayo as a dressing

over a salad of sliced mango and avocados. Or you could make a vinaigrette with it and some avocado oil.

It would aslo be great with the shrimp, avocado and mango salad that joanie (I think) posted.

And, it would be great mixed with some soy or other asian sauces as a dipping sauce for potstickers, etc.

 
Please post if you come up with a winning combo, Debbie. I keep looking at that vinegar

each time I go to TJs, but since I've already got about 8 other types in my pantry, I can't justify buying it without a specific purpose. I'm trying to be more disciplined...... smileys/smile.gif
