to use a meat grinder or casings! I just watched his show on PBS' CreateTV tonight.

The possibilities are endless. I love chicken thighs and think that I could make some good Cajun-style sausages and maybe some with cheese. Lamb, pork, chicken, turkey....... Also, I'd love to make some Asian-style sausages with scallions, fish sauce, a bit of coconut milk, and red curry paste. Mmmmmm!

The sausages would have no preservatives or additives and could be frozen, thawed, and grilled or boiled. So simple to make by making a long fat cigar shape in plastic wrap and tying-off to size with kitchen twine.

I think I would have fun experimenting with Hubert's method!
