One of my guilty pleasures is watching Spanish-language cooking shows to see how much I can pick up. On Telemundo this morning they did an interesting variation on hummus. She roasted cubed zucchinni & carrots & a few bay leaves drizzled with oil until soft. Made a hummus dressing in the food processor with garlic, lemon juice, tahini, oil & salt. Then pulsed in two charred & peeled poblanos, one roasted peeled red pepper and finally her roasted vegetables and left it a little chunky where it looked like calico dip. Served with pita. Very pretty & intriguing.
They also roasted balsamic marinated big mushrooms with the marinade, sprinkled with parmesan when the came out of the oven, then put rhem on top of a pretty composed salad on a platter and drizzled with the pan juice dressing.
