I didn’t have fresh tomatoes so I’m roasting canned diced tomatoes with some garlic and sunny Greek seasoning. Smells wonderful. This spread is really wonderful with the roasted tomatoes. I love the fresh version as well. Nice winter appie when fresh tomatoes aren’t so terrific.
I’m making the Whipped Feta appetizer for an oyster roast tonight. Always a crowd pleaser.
